Thanksgiving recap: so much to be thankful for!
Thanksgiving was really good this year. It’s hands-down my favorite holiday because of all the cooking and delicious eating. But it also saddens me that so many animals are killed for silly traditions that don’t mean much of anything. It usually means eating a ton of fattening and sugar-laden food and throwing caution to the wind when it comes to our health. So what did I do for No-Turkey Day?
Austin and I started our morning at the gym (ugh we are so healthy and I just had to show off my vegan guns in both of these photos)! We went to Beyond Fit and had an excellent hiit workout with some awesome friends. Then I hurried home to cook mushroom gravy, sweet potato casserole, and kale salad with roasted delicata squash.
Austin and I went to his mom’s house for the holiday. His mom is seriously the best. She made all the dishes vegan and even made his favorite cream cheese ball appetizer with Tofutti. She went above and beyond (and more than anyone in my family would ever consider doing for me). We had a FEAST! Excuse the crappy phone photos. Austin was adamant about relaxing and not whipping out the camera so I had to sneak a few photos with my phone.
I decided this year not to make a main type dish, but had some cooked chickpeas and tempeh and the fridge and whipped something up that turned out amazing. It was a chickpea tempeh loaf with ground sunflower seeds and nooch on top. I wish I would have written down what I did!
And here is the final plate. All vegan and gluten-free. Cornbread stuffing, chickpea loaf, mushroom gravy, kale salad with roasted delicata squash, green beans, sweet potato casserole with maple pecan topping, and lemon-kissed Brussels.
And then we had pies from Capital City Bakery! They were SO GOOD and everyone in the family enjoyed them. It was such a lovely time hanging with Austin and his family. I felt so loved and my belly was so happy!
