Although I can't participate in Vegan Month of Food this year (I'm a bad blogger, too many book tour dates, and planning the Texas State Veggie Fair which is less than 2 weeks away!!), I've been lurking on the many blogs that share some of the tastiest food online! It's hard to keep up with so many bloggers though! This must be the biggest Vegan MoFo in history! Thankfully many of my Vida Vegan Con feed and my usual hits are participating. I guess in all honesty if I read less blogs I'd have more time to write them, but I LUV reading and getting inspiration on so many fronts from vegan bloggers.
So here are some of my favorites so far. Try any of the recipes from these bloggers and you'll be more than happy you did. All the photos come from the bloggers because they are yummy!
Almond Ginger Truffles – easy, beautiful, delicious
Mac and Cauliflower Cheese – brilliant! I'm a big fan of making mac n' cheese from whole foods instead of fake cheese. My Macro Mac n' Cheese has been a huge hit from Blissful Bites.
Baked Purple Potato Fries – yum, easy and something a little different. Surely those colorful potatoes have more nutrients than the regular ones!
Tomato Basil Beanballs – creative, beautiful and nutritious (and too many great things to choose from on this entire blog!)
Breakfast Wrap – yes this is a brilliant idea and great for kiddos!
Chipotle Black Bean Burgers – yes please! My dad is going to love these!
Colossal Peanut Butter Cup – I don't usually promote sugary desserts but look at this magnificence! *drool*
